Heritage and Tradition - the Pool Room Restaurant Henry Ford Estate Dearborn

The room currently occupied by The Henry Ford Estate Restaurant once housed the fifty foot swimming pool that was part of the fascinating home of Clara and Henry Ford.

When the Fords resided at Fair Lane, there was no service entrance by which the groceries could be delivered to the mansion. The groceries were therefore taken to the powerhouse, loaded into a little red wagon and pulled along the footpath to the kitchen door. Vegetables were provided fresh for the Fords' table from the extensive selection grown in their gardens and greenhouse. The original gardener's log, kept during the Fords residence, shows that over thirty-six different vegetables were planted.

Today we are carrying on that same fine tradition of using only the freshest ingredients available. Your lunch may be seasoned with some of the fresh herbs from the estate's herb gardens.

Henry Ford was a great promoter of soybeans. On several occasions, between 1934 and 1943, he entertained reporters at luncheons, in which every course contained soybeans, from tomato juice with soybean sauce to soybean cookies and soybean candy for dessert. The photograph of Henry Ford on the wall of the restaurant shows him wearing a light colored suit constructed of soybeans. 

We have continued Henry Ford's use of the soybean and you will find soybeans used in our recipes from time to time.
