Mr. Ford's belief in healthy eating produced entire menus built from his constant experimentation  with  the versatile soybean.

More often, he and his wife ate simple meals at a small linen-covered table in the alcove. Poland Spring Water from Maine was served as a beverage. A friend recorded being served this luncheon menu one afternoon: creamed potatoes; breast of chicken; green peas; a salad of tomato, celery, and lettuce with dressing; rolls and butter; jelly and tea; and a dessert of cake and mashed peaches.
